AUTHOR NOTES

Chia pudding is easily transformed from a tapioca consistency into a luscious and airy Chia Mousse with just a few whirls of the blender. I used strawberries in this recipe, but feel free to use any local berries, mango, or even banana to add flavour and natural sweetness.


SERVES:   1

PREP TIME:  5 Minutes

COOKING TIME:  Soaked Overnight

DIETARY CONSIDERATION:  Raw, Vegan, Vegetarian, Paleo, Sugar Free, Dairy Free, Soy Free, Gluten Free



INGREDIENTS 

  • 1/4 Cup Chia Seeds

  • 3/4 Cup Almond Milk

  • 1/2 Cup Berries

  • 2 Pitted Dates

  • 1/2 tsp Vanilla

  • More Almond Milk as needed


EQUIPMENT 

VITAMIX OR BLENDER OF CHOICE


DIRECTIONS

Soak the chia seeds in the almond milk in fridge overnight.

The next day puree the chia seeds in a high speed blender with the berries, dates, vanilla, and as much almond milk as to reach the desired consistency (I like mine pretty thick, think yogurt).

Serve with extra berries.
