NOURISHING APPLE PIE PORRIDGE

While this is not a true porridge, as it contains no grains, this little bowl is as satisfying as oats and packs quite a punch. It is completely raw, chock full of protein (to keep you going), full of fruit, and warming all at the same time. Walnuts provide the bulk in this porridge while apples and dates bring a natural sweetness, and the addition of warm water heats the dish without cooking it.

PREP TIME: 3-5 Minutes + Soaked Overnight

INGREDIENTS
1 cup Walnuts (soaked overnight)
1 Apple (peeled and cored)
4-6 Pitted Dates
2 tsp. Mesquite Powder or Maca Powder (optional, but nice)
1/2 tsp Cinnamon
1/4 tsp Nutmeg
a pinch of Cloves
a pinch of Sea Salt
3/4 cup to 1 cup of Hot Water ( less than 105 degrees F or 41 degrees C )
Dried Apple slices for the top.
DIRECTIONS
In a food processor, combine the apple, walnuts, spices, and dates and puree until all ingredients are incorporated. With the machine running, slowly add the warm water until the mixture reaches desired consistency. Divide mixture amongst two bowls and top each with dried apple slices an a sprinkle of cinnamon.
